BEETROOT COTTA TART

INGREDIENTS

Vegan puff pastry
1 fresh beetroot
Olive oil
1 lemon, juice of
1 pottle of Savour Cotta
Fresh herbs
Salt & pepper to season

DIRECTIONS

Preheat oven to 180 degrees C. Cut the beetroot into wedges, pop on an oven proof dish, drizzle in olive oil and bake for 15 minutes or until tender. Combine 3/4 of the Savour Cotta with the lemon juice and season. On an oven tray, on baking paper, lay a sheet of pastry and spread over the Cotta mixture then lay the beetroot wedges on top. Bake until the pastry is golden and crispy, approx. ten minutes. Remove from the oven and garnish with the remaining Cotta and herbs, season with salt and pepper and enjoy!
